Strawberry Lassi

A refreshing Indian beverage  that you can make yourself!

Ingredients

3 1/2 cups strawberries, diced
1/2 cup sugar or Splenda
1/4 tsp ground cardamom
2 cups plain yogurt
1 cup ice cubes
pinch salt

Directions

  1. Puree strawberries with sugar or splenda, cardamom, and a pinch of salt in a blender until smooth.
  2. Add yogurt and ice and puree until smooth.
  3. If using honey, omit sugar. Add honey to individual servings after pouring into glasses.
    Stir well.

Strawberry Yogurt Muffins

Ingredients

2 cups whole-wheat flour
1/2 cup sugar
1 1/2 teaspoons baking soda
2 eggs
1 cup Blue Marble plain yogurt
1/4 cup melted butter, cooled
1 teaspoon vanilla
1 cup chopped fresh strawberries

Directions

  1. Preheat oven to 375°F.
  2. Line muffin tin with paper muffin liners.
  3. Stir together flour, sugar, and baking soda in bowl.
  4. Stir together eggs, yogurt, melted butter, and vanilla in second bowl.
  5. Fold the chopped strawberries into the flour mixture to coat.
  6. Combine mixtures and stir until flour is just moistened. (Batter will be lumpy.)
  7. Spoon into the muffin cups and bake for 20-25 min or until golden.
  8. Remove from muffin tin and cool on rack.
