Mary’s Apple Bread

Ingredients

1 cup + 3 Tbsp sugar
1/2 c butter
2 eggs
1/2 tsp vanilla
1 1/2 Tbsp buttermilk (sour milk)
1 1/2 cups grated apples
2 cups flour
1/2 tsp salt
1 tsp baking soda
1 tsp cinnamon
Additional 1 tsp cinnamon and 1/2 cup sugar for topping, if desired.

Make a double batch and give some away as gifts – this bread freezes very well!

Directions

  1. Cream butter, sugar.
  2. Beat in eggs, vanilla, and buttermilk.
  3. Add grated apples and mix.
  4. Mix dry ingredients and add to wet ingredients a little at a time.
  5. Fill greased and floured loaf pans just over 3/4 full. Sprinkle with cinnamon and sugar mixture if desired.
  6. Bake at 350 degrees for 1 hour.
  7. Cool for 10 minutes on wire rack before removing from pan. Freezes well!

Pumpkin Custard

Ingredients

1 cup peeled fresh pumpkin
1 egg, slightly beaten
1/2 cup dark brown sugar
1/2 teaspoon salt
1/2 teaspoon ginger
1/2 teaspoon cinnamon
1 teaspoon vanilla
1 can evaporated milk

To test custard for doneness, insert a knife about 1 inch from the side of the cup. Knife should come out clean, but center may still be unset and will continue to cook after removed from the oven. Or jiggle the cup and watch to see that the center is still slightly loose but the edges are firm.

Directions

  1. Beat the egg until foamy.
  2. Combine all ingredients in a blender. Pour into heatproof custard cups.
  3. 325°F oven for about 40 minutes, or until custard tests done.
  4. Serve with whipped cream (Blue Marble, of course).
