Creamed Leeks

Ingredients

8 large leeks, cleaned
1 cup milk
1/4 cup butter, divided
2 Tbsp all-purpose flour
salt and pepper to taste

With a more delicate and sweeter flavor than onions, leeks add a subtle touch to recipes without overpowering the other flavors that are present.

Directions

  1. Cut cleaned leeks into bite sized pieces.
  2. In large skillet, cover and simmer in a small amount of water until tender (30 min).
  3. Rinse with cold water; then drain.
  4. Set aside in serving dish, keep warm.
  5. Melt 2 Tbsp of butter in a skillet over low heat. Add flour, stirring until smooth. Cook for 1 minute, stirring constantly, until sauce is thick and bubbly.
  6. Stir in remaining butter and season to taste.
  7. Pour the sauce over prepared leeks and serve immediately.

Easy Arugula Salad

Ingredients

4 cups young arugula leaves, rinsed and dried
1 cup grape tomatoes, halved
2 Tbsp olive oil
1 Tbsp rice vinegar
1/4 cup grated Parmesan cheese
salt and pepper to taste
1 avocado, peeled, pitted, sliced

A tasty salad with a presentation fit for guests!

Directions

  1. In a large plastic bowl with a lid, combine arugula, tomatoes, oil, vinegar, and cheese.
  2. Cover, and shake to mix.
  3. Divide salad onto plates and season with salt and freshly ground black pepper to taste.
  4. Top with slices of avocado.
