Squash Soup

Ingredients

One large butternut squash
One quart of organic vegetable broth
One large can of coconut milk
Cayenne and salt to taste

Everybody loves this simple soup!

Directions

  1. Peel and cut up a large butternut squash into slices or cubes.
  2. Add a quart of organic vegetable broth and a large size can of coconut milk.
  3. Simmer until the squash is soft enough to mash with a potato masher, about 30 to 40 minutes.
  4. Add a smidge of cayenne pepper and salt to taste.

Mary’s Apple Bread

Ingredients

1 cup + 3 Tbsp sugar
1/2 c butter
2 eggs
1/2 tsp vanilla
1 1/2 Tbsp buttermilk (sour milk)
1 1/2 cups grated apples
2 cups flour
1/2 tsp salt
1 tsp baking soda
1 tsp cinnamon
Additional 1 tsp cinnamon and 1/2 cup sugar for topping, if desired.

Make a double batch and give some away as gifts – this bread freezes very well!

Directions

  1. Cream butter, sugar.
  2. Beat in eggs, vanilla, and buttermilk.
  3. Add grated apples and mix.
  4. Mix dry ingredients and add to wet ingredients a little at a time.
  5. Fill greased and floured loaf pans just over 3/4 full. Sprinkle with cinnamon and sugar mixture if desired.
  6. Bake at 350 degrees for 1 hour.
  7. Cool for 10 minutes on wire rack before removing from pan. Freezes well!
