Strawberry Yogurt Muffins

Ingredients

2 cups whole-wheat flour
1/2 cup sugar
1 1/2 teaspoons baking soda
2 eggs
1 cup Blue Marble plain yogurt
1/4 cup melted butter, cooled
1 teaspoon vanilla
1 cup chopped fresh strawberries

Directions

  1. Preheat oven to 375°F.
  2. Line muffin tin with paper muffin liners.
  3. Stir together flour, sugar, and baking soda in bowl.
  4. Stir together eggs, yogurt, melted butter, and vanilla in second bowl.
  5. Fold the chopped strawberries into the flour mixture to coat.
  6. Combine mixtures and stir until flour is just moistened. (Batter will be lumpy.)
  7. Spoon into the muffin cups and bake for 20-25 min or until golden.
  8. Remove from muffin tin and cool on rack.

Cherry Clafouti

A traditional French dessert that’s even better when made with Door County Cherries!

Ingredients

1 1/2 pounds pitted fresh sweet cherries
1 tablespoon butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 cup sugar
8 egg whites
1 cup milk
1 cup heavy cream
1 tsp vanilla
1 tablespoon confectioners’ sugar for dusting

Directions

  1. Preheat oven to 325 degrees. Grease a 10 inch tart pan (or similar sized baking dish.)
  2. Spread the cherries out in the bottom of the prepared pan and set aside.
  3. In a small bowl, whisk together the flour, salt and sugar.
  4. In a medium bowl, whisk together the egg whites, milk and cream. Stir in the vanilla. Gradually whisk in the flour mixture until smooth and pour it over the cherries.
  5. Bake for 45 minutes or until puffed and browned. Let cool until the top sinks in slightly. Dust with confectioners’ sugar before serving.
