Laverne’s Cheesy Potatoes

Ingredients

2 C milk
4 C potatoes, diced
1 tsp salt and 1 tsp pepper
2 T butter
2- 4 C grated cheese
2 T flour

Directions

  1. Cook potatoes in milk about 7 minutes, stirring constantly, gentle simmer.
  2. Add salt, pepper, butter and stir.
  3. Sprinkle on cheese and flour and stir to blend.
  4. Pour into baking pan and bake at 400° for 25 minutes until bubbly and browning on top.

Cottage Cheese Parfait

Ingredients

24 ounces of cottage cheese
1 cup blueberries
1 cup raspberries
1/2 cup slivered almonds
Honey to taste
4 large fresh strawberries (for garnish). Use fresh berries if possible.

Directions

  1. If using frozen berries, thaw and drain berries.
  2. Layer ingredients in a fancy glass or desert dish.
  3. Drizzle each layer of berries with honey to taste.
  4. Finish off with a dollop of the cottage cheese and place a fresh strawberry on top.
    Serves 4
  5. Kids love making this one but remember – the FDA warns that babies under 1 year old should not be given honey.
