Ingredients
2 cups whole-wheat flour
1/2 cup sugar
1 1/2 teaspoons baking soda
2 eggs
1 cup Blue Marble plain yogurt
1/4 cup melted butter, cooled
1 teaspoon vanilla
1 cup chopped fresh strawberries
Directions
- Preheat oven to 375°F.
- Line muffin tin with paper muffin liners.
- Stir together flour, sugar, and baking soda in bowl.
- Stir together eggs, yogurt, melted butter, and vanilla in second bowl.
- Fold the chopped strawberries into the flour mixture to coat.
- Combine mixtures and stir until flour is just moistened. (Batter will be lumpy.)
- Spoon into the muffin cups and bake for 20-25 min or until golden.
- Remove from muffin tin and cool on rack.
