Fried Morels

Ingredients

Fresh Morel mushrooms
2 eggs, beaten
1/4 c. milk
1 c. cracker crumbs
1/2 c. fine corn flake crumbs
Vegetable oil for frying
Salt and pepper or your favorite seasoning

Try this recipe as a side dish. Season to taste – but don’t over season, you’ll want the delicate flavor of the morels to come through.

Directions

  1. Split morel mushrooms lengthwise.
  2. Rinse well in several changes of cold water, drain well.
  3. Heating oil to 370-375 degrees in deep fryer or deep pan.
  4. Beat eggs and milk together.
  5. Mix crumbs together.
  6. Dip morels into egg mixture, roll in crumbs.
  7. Fry 4-5 minutes, turning while cooking. When golden brown and floating, remove and put on paper towels to drain. Season and serve immediately!

Creamed Leeks

Ingredients

8 large leeks, cleaned
1 cup milk
1/4 cup butter, divided
2 Tbsp all-purpose flour
salt and pepper to taste

With a more delicate and sweeter flavor than onions, leeks add a subtle touch to recipes without overpowering the other flavors that are present.

Directions

  1. Cut cleaned leeks into bite sized pieces.
  2. In large skillet, cover and simmer in a small amount of water until tender (30 min).
  3. Rinse with cold water; then drain.
  4. Set aside in serving dish, keep warm.
  5. Melt 2 Tbsp of butter in a skillet over low heat. Add flour, stirring until smooth. Cook for 1 minute, stirring constantly, until sauce is thick and bubbly.
  6. Stir in remaining butter and season to taste.
  7. Pour the sauce over prepared leeks and serve immediately.
