Easy Rhubarb Pie

Ingredients

1 traditional pie shell, unbaked
fresh rhubarb, diced (2-3 cups)
2 eggs
1 c. sugar
1 tbsp. flour
1/2 c. milk

Directions

  1. Mix last four ingredients together until sugar dissolves.
  2. Fill unbaked pie shell 1/2 to 3/4 full with rhubarb.
  3. Pour custard mixture over rhubarb.
  4. Bake 10 minutes at 425°, then at 350° for 35-40 minutes until set.
